Easy Homemade Salsa

One super easy snack and treat to keep on hand is salsa. Tomatoes, onions, cilantro, spicy peppers, garlic, and some seasonings will give you a semi-healthy snack; depending on the what you choose to serve it with. Just recently I made some delicious salsa and some really good jalapeño ranch dip. Since today some people are celebrating Cinco de Mayo, I thought I would share this super easy salsa recipe with you and some facts about Cinco de Mayo that you may not know.

Three Facts about Cinco de Mayo

1. Cinco de Mayo is a day that commemorates the date that the Mexican Army defeated France in the “Battle of Puebla” This battle lasted one day only from sun up to sun down. In this battle France lost approximately 500 soldiers. Their were less than 100 Mexicans that perished on that day.

2. Cinco de Mayo is not the Mexican Independence Day. Mexican Independence was declared at least 50 years prior and is celebrated on September 16th.

3. Cinco de Mayo is more widely celebrated in certain parts of the United States than in Mexico. Cinco de Mayo celebrations started becoming popular in the 1960’s when people were looking for ways to ways to honor the Mexican culture and history.

Did you happen to know any of these facts? I did not. There is so much more to know too. Mexico won the battle that day but, they did not win the war. The war ultimately was about money, debt, and territory. Easy Homemade Salsa

Grocery List/Ingredients

28 ounce can San Mariano whole tomatoes *undrained*

1/2 cup fresh cilantro roughly chopped

1/4 cup red onion roughly chopped

1 jalapeño pepper chopped

1/2 to 1 whole Serrano pepper chopped

1/2 lime juiced

2 garlic cloves roughly chopped

1/2 teaspoon ground cumin

1/4 teaspoon kosher salt

Everything in the bowl!

Directions

1. Add the garlic, onion, cilantro, jalapeño, Serrano pepper, lime juice, kosher salt and ground cumin to a food processor or blender. Top with the whole tomatoes and juice. Pop the top on the bowl/pitcher of the device and pulse the ingredients 6-8 times until desired consistency is desired. Taste for seasoning add more salt and cumin if needed.

2. Eat and serve with tortilla chips.

*Refrigerate leftovers*
